2. Make the Filling

To the beef and onion, stir in a 10-ounce can of red enchilada sauce (or homemade), a can of creamed corn, an 8-ounce can of diced green chiles, chili powder, ground coriander, and ground cumin. Let everything cook for 5 to 10 minutes so the flavors meld. Taste and adjust the seasonings if needed, then stir in 1½ cups of shredded cheese until melted.

3. Add the Masa Topping and Bake
