  1. Mix the dip: Preheat the oven to 350°F. In a large bowl, combine the cooked bacon, whipped cream cheese, 1 cup mayonnaise, jalapeños, mozzarella, cheddar cheese, and green onion.
  2. Add to dish: Spread the dip mixture evenly in a 1½-quart baking dish.
  3. Make topping: In a medium bowl, combine the Ritz crackers, Parmesan, and melted butter.
  4. Bake: Sprinkle the topping evenly over the dip. Bake for 20–30 minutes, until the top starts to brown, the edges bubble, and the center reaches 165°F. Serve immediately.

Slow Cooker Instructions

  1. Add the dip: Combine the dip ingredients and add them to a 1–2 quart slow cooker.
  2. Cook: Cover and cook on LOW for 2–3 hours.
  3. Make the topping: Mix the crackers and butter, then toast them in a skillet.
  4. Finish: Sprinkle the toasted cracker mixture and Parmesan cheese over the dip.
  5. Keep warm: Turn the slow cooker to WARM to keep the dip hot for up to 2 hours while serving.

Make Ahead, Storage, and Reheating

Make ahead: Prepare the dip through the second step. Cover tightly and refrigerate for up to 3 days. Add the cracker topping just before baking. You may need 5–10 extra minutes in the oven for the center to reach 165°F.

Refrigerator: Store leftover dip in an airtight container or cover the baking dish tightly. Refrigerate for up to 5 days.

Reheating: Reheat at 350°F for 10–15 minutes, or until heated through.

Freezer: Freezing is not recommended. Cream cheese can separate and change texture after freezing and thawing.
